Latest Fun Stuff

A bit behind on foodie posts. We went to San Juan's for dinner last night with Susan and Javiar and it was great. We went there years ago, and Paul didn't like it so he wouldn't go back. Sigh. It is so good, really. Everything was excellent and tasty and cheap. I had a burrito with the white cheese sauce on it, lots of jalapeno in it. Great refried beans and rice is rice. Paul had a very tasty salad, Susan had a tostada, Javiar had those little roundy roll ups. I ordered a sopapilla - spelled wrong - and it wasn't the tasty little pillow of bread, but it was kick ass all the same, dripping with honey and cinnamon.

Today we took Rick and Joyce and went into Corpus Christi for lunch at the Water Street Market Oyster Bar. Yes, we have pushed out of the box. Paul went on a road trip with the guys on Monday and they went there. With a couple of beers under his belt he handled the seafood easily. But is there anything you can't eat that is pecan breaded and deep fried with a delicious sauce on it? We had the blue crab stuffed mushrooms with an amazing dipping sauce ( it got real spicy about halfway down the throat), pecan crusted oysters, some fish, fried shrimp and also bacon wrapped shrimp. An amazing pink dipping sauce, a salad with walnut dressing (recipe to follow) another fried oyster thing. I am so full I could just nap, like Paul is right behind me.

Joyce ordered a wonderful sounding scallop dish, it didn't get ordered, still didn't get ordered, then it came, then another one came, then she discovered, and we all concurred, that the scallops were tasteless. The waitress agreed. Joyce gave up and sent it back. The manager came out to apologize and said he was going to try it to see what was wrong. Waitress brought us a huge piece, like 3 pieces in one, of the best Key Lime pie I ever tasted. Thanks to Joyce for being the goat instead of me. I always get the lousy meal, and almost ordered it, knew it was too much for me. Joyce, naturally, has been a waitress for probably 40 years.

Anyway, it was fun. We shopped a bit, went to the Surfing Museum, came home. Lovely 80 degree day, just breezy.

Monday we are stretching the box a bit more at the Pelican Club all you can eat Sushi Dinner. And Katie knows how good that is going to be! I will take pictures!

Walnut Dressing

2 Green Onions (Chopped Fine)
1 TSPN Parsley (Minced)
2 Cloves Garlic (Minced)
2 1/2 TSPNS Salt
1/2 TSPN White Pepper
2 TSPNS Paprika
1 TBLSPN Dried Tarragon Leaves
3 TBLSPNS Sugar
1/2 Cup Finely Chopped Walnuts
3 TBLSPNS Tarragon Vinegar
3 1/2 Cups Mayonnaise
3/4 Cup Buttermilk

Combine all ingredients and mix well.; Store in refrigerator.
Will keep 10 days (Makes 1 QT)
